Mitolo Welcomes Executive Chef Lino Sauro

Mitolo is thrilled to welcome Lino Sauro as Executive Chef across its McLaren Vale operation.

Born in the Sicilian village of Gangi to a lineage of farmers, Lino’s passion for cooking became evident at an early age. A self-proclaimed ‘traditional village boy”, Lino spent his early years lending a hand on the family farm and learning the techniques of Sicilian cooking with the fresh produce they cultivated.

At the age of 15, Lino set off from his village and began exploring the world, all while spreading the gospel of Sicilian culture and cuisine. He honed his craft across Europe, South America and Asia, cutting his teeth in several five-star establishments, before eventually settling in Singapore.

Lino opened his first restaurant in 2010 - ‘Gattopardo’, winning acclaim across Singapore for its signature dishes and its dedication to authentic Sicilian cuisine. For a new challenge, and to escape the humidity, Lino brought his family and his brand of contemporary yet traditional Italian cuisine to Australia in 2017, opening his restaurant ‘Olio’ in Kensington Street, Sydney.

Continuing his mission to bring the cuisine of his homeland to the world, Lino joins the Mitolo team – leading the kitchen across Little Wolf Osteria, Frankie and weddings.
