Generous red plum, blackberry, and black currant, savoury herbs, subtle tobacco, cedar and dark spice notes. A harmonious background acidity balances out the richer fruit elements and adds succulence to the tannis, leaving a smooth finish. \u003c\/p\u003e\n\u003ch2\u003eVinification\u003c\/h2\u003e\n\u003cp\u003eDestemmed and crushed into 8 tonne potter fermenters with twice daily pumpovers, and lager vinomatics under a gentle extraction regime. Temperatures were kept cool, between 20 and 24˚C to retain fruit vibrancy and ensure a soft tannin structure. The ferment was pressed off at approx. 2 Baume to finish in stainless steel tank, before natural malolactic fermentation and 16 months maturation in 75% French and 25% American Oak Hogs Head Barrels, with a small percentage of new oak in the mix. The wine is unfined and underwent light filtration prior to bottling. \u003c\/p\u003e\n\u003ch2\u003eVineyard\u003c\/h2\u003e\n\u003cp\u003eLopresti Lot 11 Vineyard - Flour Mill Road, Whites Valley. \u003c\/p\u003e\n\u003cp\u003eLocated less than 4 KM from the coastline of the Gulf St Vincent, soils across these two blocks include grey to brown sandy clays and black Biscay clays with distinct limestone deposits, sitting atop Ngaltinga formation. These highly reputed soils maintain soil moisture during the growing season then dry out and crack open in summer, controlling vine vigour and concentrating flavours in the fruit, whilst the limestone element imposes finessed tannins and a balanced acidity.
