Beautifully-knit flavours of citrus and lemon curd upfront, followed by subtle oak derived notes of clove-spiced pear and roasted almond. It has a creamy texture and racy acidity that drives a long lingering finish.
Vinification
Hand Harvested, chilled to 4˚C, crushed and destemmed. Gentle air bag pressing achieved free run extraction of approx. 550 Litres/tonne. No pressings inclusion. The wine was wild fermented with full solids in a combination of 50% new and 50% 2nd use French Oak Hogs Heads. 80% natural Malolactic Fermentation allowed before sulphuring. Regular lees stirring occurred throughout the wine’s 6 months maturation in barrel. Unfined with sterile filtration prior to bottling.
The cool climate, southern Adelaide Hills Longview Vineyard supplied fruit for the 2020 Of The Wind Chardonnay. An elevation of 300 to 350 meters, a southerly aspect and temperatures mediated by southerly breezes off of Lake Alexandrina assert the vineyard’s cool climate and help to retain acidity and fruit purity.
