Generous whilst remaining elegant, the palate exhibits flavours of blackberry compote, crushed cherry, green peppercorns and brambly herbs. It is framed by gravelly tannins and succulent acidity resulting in a long and poised finish.
Winemaking
Destemmed and crushed to 2 tonne open top fermenters, pumped over once to twice daily for 8 days. The ferment was keep cool, at approximately 20˚C, in an attempt to extract tannin, colour and flavour very softly. Once pressed, the wine was transferred to 100% seasoned Hogs Heads of French origin, for natural malolactic fermentation and 7 months maturation. The final blend is clarified by racking only, and bottled without fining or filtration.
Vineyard
Lopresti Ridgehaven Vineyard - Hahn Road, Sellicks Hill, McLaren Vale.
Located at the southern end of McLaren Vale between Sellicks Hill and Willunga on the foothills of the Mount Lofty Ranges. The site is defined by heavy clay loam soils with shattered gravel throughout the profile, over Christies Beach formation. A northwesterly aspect captures ample sunlight and ensures ripening whilst the warmth of the site garners concertation and plush tannin maturity in the fruit.
