'Travato' meaning 'found'. Like all children of the house, there comes a time to explore to new lands. Finding a new home in McLaren Vale, Trovato is sourced from the Lopresti Home Block, less than 4km from the coast at Aldinga.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch2\u003e\u003cstrong\u003eTasting note\u003c\/strong\u003e\u003c\/h2\u003e\n\u003cp class=\"p1\"\u003eOpulent and fleshy, medium bodied and satin textured with aromatics of white and yellow flowers, honeycomb, and buttered toast, stone fruit and citrus, toasted hazelnut, almond and a hint of tarragon. On the palate, a mineral line of slate and flint with fine grassy phenolics underpins peach, nectarine, white currant, granny smith apple, monstera fruit, hints of black tea leaf and a subtle saline, preserved lemon note. The juice was split into two parcels: 60% racked to tank with light lees and fermented cool, between 12-16 degrees Celsius, to express bright fruit aromatics, then transferred to barrel at approximately 5 Baume to complete primary ferment. The remaining 40% was entirely barrel fermented with full solids and warmer temperatures, adding complexity to the profile. Both parcels were sulphured without malolactic fermentation and kept on lees for 8 months with regular stirring in 12% new, 12% second fill and balance seasoned French oak hogsheads\u003ca style=\"color: rgb(0, 0, 0);\" name=\"_Hlk187854170\"\u003e\u003c\/a\u003e before blending, heat and cold stabilisation and sterile filtration prior to bottling.\u003c\/span\u003e\u003cu\u003e \u003c\/u\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003ch2\u003e\u003cstrong\u003eVineyard\u003c\/strong\u003e\u003c\/h2\u003e\n\u003cp\u003eLopresti Home Block Vineyard – Flour Mill Road, Whites Valley.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eLocated less than 2 kilometres from the coastal town of Aldinga and only 4 kilometres from the coastline. Ngaltinga Formation derived alluvial grey sandy clay with pockets of sand interbeds support healthy canopy growth, protecting Fino’s fine aromatics and natural acidity.
