Lopresti Home Block, Whites Valley. Cool ferment in tank, with regular lees stirring post ferment over eight months' élevage. Italian pecorino – the survey here is somewhat less decisive – can range from relatively neutral to highly aromatic, verging on the tropical. I’m not a fan of either extreme, and this confidently walks the line between. Sushi ginger, ruby grapefruit, Cripps Pink apple, cool white nectarine, tomatillo, cape gooseberry and a pink talc/bath salt note. There’s some appealing give to texture here, smartly aligned with lively natural acidity and delicately sandy phenolics. It’s an excellent example of the variety.

Bitter, pithy, skinsy and crammed with fresh-picked lemons and vivid green herbs, this is a chalky, pristine Pecorino with flickers of electricity at the centre of every wave of flavour breaking on your tongue.  It is, without doubt, the greatest Pecorino I have ever tasted.  I never realised this oft-awkward grape variety could ever reach these levels of grace, dynamism and splendour.
