Jester Cabernet Sauvignon 2021

Story

The life of the party, the instigator of frivolity, the undying entertainer. A modern-day jester gathers friends around regularly to eat and drink well, and much like their medieval predecessors, reminds us that life shouldn’t be taken too seriously.

Tasting Note

Savoury and red fruited with sweet plum, blackberry and blackcurrant, dark cherry, sage, clove and cola nut. Medium weighted and fine boned with soft cedary tannins and bright acidity. Undertones of leather and dry tobacco leaf emerge subtly through the finish.

Vinification

Destemmed and crushed into 8 tonne potter fermenters with twice daily pumpovers, and lager vinomatics under a gentle extraction regime. temperatures were kept cool, between 20 and 24˚C to retain fruit vibrancy and ensure a soft tannin structure. The ferment was pressed off at approx. 1 Baume to finish in stainless steel tank before natural malolactic fermentation, racking and 12 months maturation in 80% French and 20% American seasoned oak Hogs Head Barrels. No finings and only light filtration were used prior to bottling.

Vineyard

Lopresti Lot 11 Vineyard - Flour Mill Road, Whites Valley. Located directly opposite the original ‘Home’ block in the tightly held sub-district of Whites Valley, less than 4km from the coastline. 
Characterised by black Biscay clay with distinct limestone deposits throughout, atop Ngaltinga Formation. The Biscay clay promotes strong growth in spring but dries out and cracks in summer, releasing excess moisture and pulling back vine vigour approaching veraison, producing powerfully concentrated fruit. Whilst the limestone element imposes finesse and a balanced acidity. The coastal location allows sea breezes to mediate daytime heat during the critical ripening period.
