Story

Like the mythical dragon after which it is named, Savitar is a wine of power, polish, and an elegantly long tail.

Tasting Note

Precise and driven. Fine boned yet eminently present. Red and dark fruits along with mocha and liquorice nuances, yield to highly finessed and incredibly fine-grained savoury tannins. Graphite in texture, the wine is tightly wound within long mineral acidity, which carries intensity through the palate. White pepper, cedar and elegant allspice notes linger throughout the enduring, linear finish.

Winemaking

Destemmed and crushed into 2 tonne open fermenters, with twice daily pump overs throughout ferment. Temperatures were kept cool, between 20 and 24o C to extract the tannin, colour and flavour very softly. After ferment, the wine was matured for 20 months in 85% new French, 5% New American and 10% Seasoned French Oak hogshead barrels, undergoing natural malolactic fermentation during this time. The 2020 Savitar Shiraz was made without finings and received only light filtration prior to bottling.

Vineyard

Lopresti Home Block and Lot 11 – Flour Mill Road, Whites Valley.
Small, specially selected parcels from Home Block and Lot 11. Grey sandy clays and black Biscay clays predominate, sitting over alluvial Ngaltinga formation. These highly reputed soils maintain moisture during the growing season, then dry out and crack open in summer, controlling vine vigour and concentrating flavours in the fruit. Cooling sea breezes off the Gulf of St Vincent mediate daytime heat and keep nights cool, retaining acidity and vibrancy.
