Story

Like the mythical dragon after which it is named, Savitar is a wine of power, polish, and an elegantly long tail.

Tasting Note

Svelte and lithe with impeccable length and elegant yet powerful drive. The rich breadth of fruit encompasses black cherry, blackberry, blood plum and ripe blueberry, moving into black olive and cured meats, with subtle savoury and sweet spices, black pepper, cedar and baked earth tones. The fine, firm yet smooth and luxurious tannin profile underpins the palate, driving incredible length and an enveloping shape along with perfectly balanced acidity. The 2022 Savitar Shiraz is a wine of depth, poise, intensity and complexity, with a very long cellaring life ahead of it. 

Winemaking

Selections from Lot 10 and Lot 11 were destemmed, crushed and fermented at cool temperatures in open top vessels, with twice daily pump overs on both, and additional rack and returns on Lot 11 to accentuate tannin length and finesse. After ferment, both parcels were matured in a mix of new and seasoned hogshead barrels for 20 months, with natural malolactic fermentation occurring during this time. The final blend sees the highly finessed Lot 11 taking the compositional lead, and constitutes an oak mix of 75% new and 25% seasoned French oak hogs head barrels. No finings were used and the wine underwent light filtration prior to bottling.         

Vineyard

Lopresti Lots 10 & 11, Flour Mill Road, Whites Valley

Located directly opposite the original Home block in the tightly held sub-district of Whites Valley, less than 4km from the coastline. These blocks are characterised by black Biscay clay with distinct limestone deposits appearing throughout Lot 11, atop Ngaltinga Formation. The Biscay clay promotes strong growth in spring but dries out and cracks in summer, releasing excess moisture and pulling back vine vigour approaching veraison, producing powerfully concentrated fruit. Additionally, the limestone element in Lot 11 imparts finesse, and a balanced acidity. The coastal location allows sea breezes to mediate daytime heat during the critical ripening period.
