This was picked at night, then fermented cool in tank, all to preserve delicate aromatics and yield crisp, snappy refreshment. And it does just that, while also offering a briny tang that builds on the theme, along with notes of lemon, lime, green apple, pea tendril and tart white peach. It’s a coiled spring right now, needing a month or so to relax, but it’s got flavour and drive, which bodes well.
