Of The Wind Chardonnay - 2021

Sourced from the reasonably cool Longview Vineyard in Macclesfield, this light- to gently mid-weighted chardonnay was hand picked and airbag pressed to include free-run juice only. Wild fermented on full solids in new and used French wood. Stirred. 80% mlf. Unfined. And yet, while layers have been built into this with a textural winemaking weave, it lacks flavour. Chablis exceeds this alcohol level and it is considerably chillier. The oak, though, sublime. The lees work, skilful. The bones impressive.
